About winery
The small boutique Fiolić Winery is located in the heart of Zadar, in Borik, and was founded in 2016. Despite its young age, it has quickly gained a reputation for its premium wines, which have become highly sought after among wine enthusiasts. Under the guidance of owners Dario and Ana Fiolić, the winery’s wines reflect a unique symphony of flavors and the rich terroir of the Zadar region. The grapes are sourced from seven hectares of vineyards located in Vukšić, Stankovci, and Smilčić. The soil, predominantly sandy with a limestone base, provides excellent drainage, allowing the vine roots to penetrate deep in search of water while absorbing a wealth of minerals, which gives the wines a distinctive minerality. The Fiolić Winery tasting room, situated in Borik on Matije Gupca Street, offers an ideal urban location for direct wine sales, something locals have been enjoying for years. It can accommodate up to 15 guests, with visits and tastings available by appointment only. The winery produces 20,000 bottles annually and offers nine wine labels: Debit 2023 – a new label in the winery’s portfolio ; Maraština 2023 ; Maraština 2020 – aged for 12 months in Croatian and French barrique barrels ; Fiolić Rosé 2023 – a blend of Plavina (40%), Grenache (40%), and Syrah (20%) ; Cuvée 2020 – a combination of Grenache and Syrah, aged 12 months in French and Croatian barrique barrels ; Fiolić Merlot 2018 – aged for 24 months in Croatian, French, and American barrique barrels ; Fiolić 2018 – a premium blend of Merlot (50%), Cabernet Sauvignon (40%), and Syrah (10%), Fiolić Babić and Fiolić Syrah. In addition to wines, the winery also produces unique liqueurs made from dried figs and Marasca cherries. This year, Fiolić wines have achieved outstanding success at the prestigious Decanter World Wine Awards, winning three silver medals. This esteemed recognition was awarded to: Fiolić Maraština, Fiolić Syrah, Fiolić Babić. The Fiolić family also owns the well-known Wine Garden Bar on Zadar’s Old Town Peninsula, where they organize wine tastings and events for larger groups, further promoting their wines to both locals and tourists.
