About winery

Tomić Winery, located in Jelsa on the island of Hvar, proudly operates in a new winery situated on the family estate in the Mina bay, a place with a long tradition of winemaking. The annual production reaches between 130,000 and 150,000 bottles, and in addition to the Tomić family members, the winery employs twelve locals from Hvar. In the cellar, where wines mature in barrique barrels, there is also the Triklinij – a space carved from stone, with tuff vaults and travertine columns, inspired by the architecture of Diocletian’s cellars. This space is dedicated to those who want to experience Hvar’s history, wine, and stone in their true, inseparable connection. As the number of winemakers on the island has declined, they decided to plant their own vineyards while sourcing the rest of the grapes from their regular cooperants. Today, the winery owns about 10 hectares of vineyards, mostly focused on organic production, which not only ensures the quality of the wine but also the preservation of the environment and human health. The main vineyards are located in the Vira bay (an ecological vineyard), in the Stari Grad Plain (Ager), and in the vicinity of Jelsa. The winery produces wines from various varieties, with the dominant ones being Plavac Mali, Pošip, and Bogdanjuša, along with Cabernet Sauvignon, Merlot, Cabernet Franc, Muscat Yellow, and other locally established varieties. They offer 11 labels on the market, with the standout wines being Plavac Mali „Illyricum“ and „Caplar“, a blend of Cabernet Sauvignon and Plavac Mali in a 50:50 ratio .In addition to wines, the winery also produces labels for Prošek, sweet Dalmatian wine, and liqueurs made from carob, sage, and cherry, further enriching their offer of authentic local products. Visitors can enjoy guided tastings in the winery’s cellar, built in the ancient Roman style for feasts and gatherings.
