Jagunić Winery, located on the slopes of Plešivica near Jastrebarsko, carries a long-standing family tradition that has undergone a significant transformation — from producing everyday fresh wines to focusing on outstanding sparkling and amber (macerated) wines. The winery is now led by Dominik Jagunić, who took over from his father in 2013 at just 24 years old, bringing with him a fresh vision and modern approach. His winemaking style blends tradition with contemporary techniques, emphasizing terroir authenticity and natural vinification methods. Currently, six grape varieties are cultivated across 12 vineyard plots, totaling seven hectares — all situated near the winery to minimize the time between harvest and processing. The winery produces around 50,000 bottles annually, with 70% being sparkling wines. The main market is the city of Zagreb.
Jagunić is particularly known for Traminer, one of the oldest cultivated grape varieties. The first 1,800 vines were planted in 2006, and by 2009 the vintage was awarded as the best Traminer in Zagreb County. Other wines in the range include Pinot Gris, Red Traminer, and Riesling. In 2016, Dominik dedicated himself to amber wine production, under the Amber Selection label. These wines are made using maceration — a technique where white or red grapes such as Pinot Noir, Pinot Gris and Traminer are vinified like red wines, with shorter or extended skin contact. Fermentation occurs with natural yeasts, and the wine is aged on the skins in wooden barrels for seven months. The result is a rich, complex wine, with a color ranging from orange to rose-amber and intense aromas of flowers and ripe fruit. The standout wine in this category is Traminac Crveni Amber Selection, a benchmark for this style in Croatia.
Among their sparkling wines, Three Stars stands out — a blend of Chardonnay, Riesling, and more than 15 indigenous Plešivica varieties, including Plavec Žuti. Grapes are sourced from the winery’s three best vineyards, and the wine is produced using the traditional champagne method, with 20 months of lees aging, giving it depth and character. Jagunić Winery today represents the modern face of Plešivica — a harmony of respect for heritage, passion for nature, and a commitment to excellence.
