About winery
Kopjar Winery, located on the border between Varaždin and Krapina-Zagorje counties, has been dedicated to ecological grape growing since its inception in 2012, without the use of mineral fertilizers, pesticides, or herbicides. The grapes are processed with minimal amounts of enological substances allowed in ecological production, ensuring the creation of premium organic wines. In their vineyards, they grow white grape varieties such as Sauvignon, Riesling, Graševina, Yellow Muscat, Chardonnay, Green Silvaner, and Manzoni, while the red varieties include Cabernet Sauvignon and Pinot Noir. Due to favorable soil and climate, the grapes develop their maximum potential. At the recently held Sparkling Zagorje Breakfast, the Kopjar winery premiered its first three organic sparkling wines: Blanc de Blancs, Pinot Noir Rosé, and Muscat, made from ecological Chardonnay, Pinot Noir, and Muscat grapes using the traditional Champagne method of long fermentation in the bottle. These sparkling wines are available in brut and demi-sec categories.
